Metaframe XP Preinstallation Questions

This will be long-winded but I need some help in my decision making since I am new to the "design" of an XP environment. First, some background info: we are a small hospital. We will probably have no more than 250 total Citrix users. Currently, the apps I KNOW will be published are: Lotus Notes, Client Access, Open Office, Internet Explorer, along with a couple of specific hospital apps. We do have some remote sites that will use Citrix.
Approx. 2 years ago they purchased 3 IBM Netfinity boxes, quad processors, 4gb of ram, 36gb+ of storage, and Citrix Metaframe 1.8. My feeling is the project was not thought out at all prior to purchase. Citrix was never put into production. Now, 2 years later I am here and it's my responsiblity to get the project going. However, 1.8 and XP are very different products and each have specific requirements. I have 3 servers to work with but get the impression that won't be enough. I would want the data store (preferrably SQL) to be a dedicated server - is this true? I would think it'd be a good idea to keep the user profiles and home directories on a seperate server as well - is this true? Would it be wise to put the user related data on the same server as the data store? Should the Lotus mail application run on a seperate server?
