This might be a stupid question but I hope someone can help me. One of my clients gets notifications when there's a system error and I wanted to turn it off. I tried going into NDPS printer access control under the user object and I thought you can turn it off by going into "Notification" but that box was greyed out for some reason. Maybe I'm not looking in the right place. Any suggestions?

A system error, or a printer error/message? If it's a printer related message, try checking the properties of that printer on that client's workstation - there's an option in there for Notification (usually on the Printer Settings tab). Also check in the Network Neighborhood properties, Novell NetWare Client properties, and on the Default Capture tab there's also a setting for Notify.
