may need to reinstall MOSS 2007. How to restore origional Server farm?

we are working on a major external IP address overhaul, and one possibility that I need to address is uninstalling & reinstalling MOSS 2007

My problem is that that I cannot find any documents on how to reattach SQL Databases once a new farm is configured. I need to keep my old Databases and reattach them. Is this possible?

If not is it possible to restore an older farm backup once SharePoint is up and running again?

What are my options before I take it to my IT Manager? I am in dire straits right now
 
If you are only changing your web and application servers, I believe you can just run the install SharePoint on your new front ends and connect to the existing database. That should automatically add them into the farm and then you can CA to configure their roles. Once you have the new servers set up, you can just uninstall MOSS on the old servers.

I do not currently have a MOSS server farm to test this on, so hopefully someone can back me up.

MOSS as well as SQL Express runs on the same server. I did not create a server farm. I actually tried hosting MOSS SQL databases on a production server, and it almost brought my entire network down.

With that said, I would not be able to install another MOSS 2007 instance on another server.
 
would it work if I uninstalled MOSS 07, reinstalled MOSS 07 and then restored using the last Server Farm backup?
