When you go into Computer Managememt and expand Shared Folders you have 3 entries.

Does anyone know what the maximum number is for Sessions and Open Files for Server 2003 standard?

Depends on how you have set up licensing on the server. If you are in per-server mode, the the limit is the number you have configured the server for. In per-seat mode the limit is based on how powerful your server is.
