i would like to set up a mail server on mandrake 8.1 if and one would know of a good wed site or book that would help me out alot thanks for your time

I don't know of anything Mandrake specific on Sendmail or Postfix but you can look at the redhat howtos/faqs because Mandrake is 99% compatible with redhat in terms of the way its put togther.
Sendmail is the most tricky for beginners - partly because you normally edit the macro config file and process via 'm4' to produce the 'real' config file read by sendmail. Remember if you install Sendmail to install both the 'Sendmail' and the 'Sendmail-cf' rpms otherwise you can't readily change the config.

Your distro ships with a lot of packages (RPMs) that help you to set up a mail server.

I can only say thay I am using postfix as my MTA, and fetchmail for retrieving mail from remote mailboxes.
I've read about sendmail and qmail, and have heard that postfix is for 'small' mail servers....
