Managing my Assigned queue - leaving Outlook.

We have CRM 3.0 integrated with Outlook, and I don't care for it. (Partly I want to keep CRM in MSIE, and partly I'm trying to do testing, and until I can get more memory to keep VMWare running, my computer is it.)

Currently, I'm investigating the Assigned queue area, and I have some questions:

- Is it possible to make folders in here, like in OL, or am I stuck with "An email is active or it isn't"?

- How can I customise the My Work > Assigned view? (I have system customiser rights.) I want to see the From person, at least, for emails.

- Where do sent emails go?

It's entirely possible these are obvious, found-in-Help things; if so, beg your pardon.
 
Forgot to add:

- How do I get emails created in CRM to be plain text, for heaven's sake?
