Is there a way to make a circle look like it's embossed or even 3D? I'd like to give it some depth without adding a drop shadow.

Yes. make a circle with a fill color.
Put another circle on top of it with a radial gradient fill white to black and multiply it

You can experiment with a radial gradient applied as a fill and tweaked with the gradient tool.

Thanks. I did something similar. I put a stroke around the circle and made the stroke a gradient. I made the center of the circle about 20% of the color I'm using.
