So you want the new version to look like an old version that you are familiar with?
If so, I can totally understand, but…
As much as I hate the look and feel of the new versions, I would strongly suggest to ‘bite the bullet’ and get used to the new version. Why? Let’s say you can make 2010 look and feel like 2003, and then in a year or two you get the 2012 version and you still be able to make it look like 2003. And then in version 2013 you will not be able to change the look and feel. And then what? You will be totally lost. And nobody will be able to help you because you will be about 10 years behind everybody else.
Remember Windows 3.1? Remember File Manager? (You may not remember, it was many years ago… That shows you my age ) You could for some time make Windows Explorer look like File Manager. Imagine now you need to explain to somebody how to use Explorer because the only way around their HD they know is File Manager.
