The account I first set up in Eudora is no longer valid. Eudora still collects my other accounts, but when I write a message it defaults to being from the old address.
Can I delete the dominant account, or make another one dominant?
Can I back up the whole user-data branch, reinstall, copy the branch back and expect not to have problems?
If I reinstall, can I selectively move data from the previous install back? For instance, where are the account details held? Will copying mailbox files back work well?

1st Question
I don't think you can delete the dominant account but you can edit its properties, so in practice you can make it a whole new account with different mail servers, username, password etc.
2nd Question
I have frequently restored my user data such as mailboxes, address book, recipient list, signatures and stationery with no problems.
3rd Question
backup all your data to a different folder before you reinstall then you can copy back whatever you need. Unfortunately Eudora does not maintain a separate folder for user data but lumps it all in the program folder. You can sift through the files and just backup what you require. Most data files are fairly obvious from their names, if in doubt open them in notepad and see what they contain.
