We are running three Windows 2003 servers which seem to be shutting themselves down without warning, sometimes they reboot as if there was an error and it restarted because of it (this is turned off) and sometimes its as if they enter hibernation mode. Again, hibernation is not enabled.

This all occurs when users are logged in and so they get thrown out.

There doesnt appear to be anything in the event log so im hoping someone may have an idea as to whats up?

Does this always happen at the sametime during the day? You may want to take a look at they system event log events just prior to the server restarting (look again)
Are your servers connected to a UPS? Check to see if there are no power outages during the time your servers go down.

Man this reminds me of the all to frequent Anti-Virus programs that cause uber erratic behavior after something like an engine update that you are unaware of... *mumbles* Rotten Symantec.

They are connected to UPS yes. I havent logged the times at which they go down but I would say that it's reasonably consistent.

Ive checked the system logs numerous times and find nothing unusual, just a system event saying that the machine shutdown was unexpected. When the machines go into "sleep" they lose video and the network card shuts down, the machine "looks" to be running fine - all LED's are lit and theres still HD activity.

Ah yes, we have just uninstalled Symantec (or attempted to uninstall it) and tried installing Kaspersky. These problems started after that. I thought it was Kaspersky but having removed that, we still have the problem as of today.

I should probably have mentioned that to begin with.. duh.
