mail server conundrum

I currently have my internet resources divided between three servers - Godaddy for Domain registration, Sherweb for mail main server and Hostgator for hosting. Each is excellent at what they do.
I have about thirty domains which all point to my business domain, and when I had mail on GoDaddy (which is not excellent for mail..their extreme spam protection cut out well over a third of our good incoming mail) I was able to point forwardarding as needed to me@mydomain.com. Sherweb, however, only allows one address per mailbox. (but they are excellent)
I need to create other addresses and wonder the following:
Can I create forwarding addresses via CPanel on Hostgator (we have "reseller hosting" with the domain of the mail account on Sherweb.. MX points to (must point to) Sherwebm, but is there a way to set up mystuff (instead of "me")@mydomain.com as a forwarding address either on Hostgator or Godaddy and expect it to reach me@mydomain.com?

If not are there any Exchange servers out there which offer forwarding only addresses along with the main exchange address. I would prefer to stay with Sherweb.. It's as good as it gets except for the lack of forwarding addresses. Godaddy has an exchange server, but recent inquiries showed that their spam policies have not changed, so they are out.

For the time being I am going to do a free forward of one of the other domain names from Hostgator, but I am sure there is a better solution.
