Mail relay function ?

Hi all,

I have read sendmail configuration, but I have much vague ideas about relay function of a mail server. Please give me an example realy mail server, and its its operattion, befefit as well as risks of security. ( as much detailed as possible, an example with normal mail server and relay mail server, their accounts, their mail user...)
