mail bagging

Hey, see I have this client that we mail bag for. We have a working slack box. here's and example.

dogs$cats.com
docats01
docats02
docats03

changed the name from Bob to Sam on docats03. Well sam@dogs@cats.com can send mail out, but If I send to sam it bounces back. what am I missing here??
