We are trying to use the disk copy program to burn files to a disk in OSX. We have permissions to the files we want to burn, but the files are grayed out and cannot be selected when we try to burn them using the utility. Any suggestions would be greatly appreciated.

If you're just trying to make a data CD, you don't use disk copy. when you insert the disk, open it with the finder. It will appear to be like a floppy. Copy the files to it then, when you eject, the finder will ask you if you want to burn the CD.
