At 9pm the consoles automaticly go into nite mode, how do you stop it from going nite mode, and thus
stays in day mode and you thus have to switch to nites manually

Under your NIT Data in the Customer Data Block

There is no automated Night Mode on an console. I suspect this is in voice mail.

There are Night timers in the Customer Data Block to turn on and off Night Service by time of day.

They do not turn Night on or off. You must put the console in Night. The NIT by Time of Day says "If you put the console in Night between nnAM and nnPM, the calls with go to xxxx.
