I was told to set the office timings in 12-02. And recently I moved the timings around. I have just noticed that during business hours all telephones show <Night>. I am not sure though if this has been the case all the time during business hours.

It looks like this is not affecting calls from outside. Customers still get the right message during business hours, and that our offices are closed when they are closed.
 
Night is the default ID for mode 2. Usually used for night mode with different greetings and options. If you have a night key on a phone try pressing it to toggle to day mode which usually has no ID. However, automatic night switching takes president. Check the changes you made to the schedule.
 
There doesn't seem to be a night key.

I've found in 12-07, I can change the names which are displayed on the LCD. I changed the word 'Night' with 'Afternoon' and it changed on the LCD upon refreshing the screen. But my question remains the same: If the name of mode 2 is X, why does a phone show X before the time comes for mode 2 as defined in 12-2?
 
The night mode default access code from station 101 is 718 + mode number. Try dialing it to change the mode. For more detailed assistance you need to post your program settings from blocks 12, 22-02, 22-05, 47-11, 47-12.
 
In 12-02, I changed the # in the Automatic Night Service Patterns (Operation Mode) box in the 3rd row from 2 to 1 and saved the setting. Then I made it again 2. Now it works fine somehow. I'd leave it untouched at the moment to avoid any potential error.
