Enable logging in IIS - go to the Properties of the website, Website tab, and check Enable Logging, and hit the property button if you want to tweak what is logged, and where it's logged to.

You can also use the FSO to write that into a separate text file if you wanted. It might make it a little easier to read than the IIS logs, and you can also control how it is written, and what is written.
