Getting to know LINUX;

How can I view the files and folders in a directory one screen at a time ?

less is typically more powerful than more, as most more allow only scroll forward, were less allows forward and backward scrolling... but either works.
 
Not in all implementations... chacalinc... in More for SUN's Sparc server it's still forward only, and I know that some other Linux distros have a version of more that is much like the old more... I know that some systems have more implimented as a sym-link to less as well. less is more powerful and useful in general and seems to be more consistant across versions of *nix systems.
