I haven't done much of this before, so bear with me. I need to terminate some low voltage wires (HDMI, CAT5e) inside a cabinet. I've got the faceplate figured out (Hubbell iStation). I plan on surface mounting a single gang box to the interior. Should I use plastic, or a metal one that electricians use? Does it matter to performance considerations? What should I search the internet for?

You aren't REQUIRED to use a box at all - although you may want to for mechanical protection. Metal or plastic - no performance difference. It's more about what type will mount easiest for your requirement. I'd go to my local Lowes/HomeDepot/HardwareStore and browse that way...

yes, i need to mount to the faceplate to something. i see on a metal box, the punchouts seem sharp, that's one consideration.

On a metal box, I'd use a bushing to protect the cable from chafing.

With a metal box you may be required to ground the box to the electrical panel, and they have sharp edges. I would go with a plastic one unless you are concerned about damage or vandalism.

You may want to look at the above product. These are really handy and you don't have to worry about sharp edges. Installs in minutes and are pretty secure. Also cheaper than plastic or steel boxes and easier/quicker to install.

When is the last time you helped someone, just because you were able to?
