Looking for tutorial or book or site on using Infopath and Sharepoint

I have a SharePoint Portal (2003) as a company intranet, and have been given InfoPath (2007) to create and publish forms. We are all running Office 2003.

I have been googling for tutorials on Infopath and how to use it in Sharepoint, but am not finding much other than how to create a form using the webparts. I am reasonably familiar with Sharepoint but Infopath, forms, xml, and databases are pretty new for me.

Can anyone suggest resources to help me come up to speed in publishing forms and getting the form information to the appropriate person? Right now the answers just sit in the library where everyone can see them - I want to restrict who can view the answers.
