I am a visual artist who has just taken to working with digital photography, when I go to load a new photo into Photoshop it asks me to assign a profile, the drop down list has several monitors and cameras, but my camera is not listed, Where can I go to find a profile that matches my cameras output to minimize color loss?

Probably to the manufacturer. If there's not one available, I thing Adobe recommends the 1998RGB profile.

Check the settings on your camera for profile used most digital cameras capture with sRGB which is a condensed gamut version of RGB, kiddpete is right in suggesting AdobeRGB(1998) which is a larger gamut profile
