You can insert a picture from file in the header just like you insert a picture from file in a document. Just make sure your cursor is in the header when you click on insert/picture from file in the file menu.

I am running Office XP, so this may be different for you.
Try this:
1) Go to the "View" menu
2) Go to "Header and Footer"
3) Click the "Custom Header" button
4) Select the appropriate section (Left, Center, Right)
5) Click on the "Insert Picture" Button (it has a picture of a mountain on it)
6) Browse to the picture location and select the picture
**** Be aware, it may take moving some data to clear the header in a printed form. ****

Up to Office Excel, I know that I can not be done. The only work around that I have come across is to set the header and titles both to 0 and put the logo on the sheet with what you would have used as header text next to the logo.
