I currently have 2 disks(hdisk0,hdisk1) assigned to the rootvg and 1 logical volume lvhci. The logical volume is configured to keep 2 copies of all logical partitions and to keep the copy on a different physicial volume than the original copy. In other words, copy1 on hdisk0 and copy2 on hdisk1. All Physicial partitions are allocated on hdisk0 and hdisk1.

My question - if I add 2 disks(hdisk2,hdisk3) to rootvg, will I be able to increase the number of logical partitions and have copy1 continue on hdisk2 and copy2 on hdisk3?
 
Within the LVM, you can tell it where to limit the places to put the LP's. Just change the Physical Volume options under smitty|System Storage Management|Logical Volume Manager|Logical Volumes.

I would do the following:
1. Create a new volume group
2. Move the Logical Volume to the new Volume Group
3. Mirror it with hdisk2 and hdisk3
4. Mirror rootvg across hdisk0 and hdisk1

I always limit rootvg to AIX operating system related files only. No exceptions. This makes O/S upgrades much easier.

If you choose not to do this, then do the same 4-steps, but just add the disks to rootvg instead.
