I have several thousand log files like:
C:\Program Files\Exchsrvr\MDBDATA\E000083A.log
Going back to the date we installed exchange...
Are these files safe to delete, and how can I stop/limit the amount of information going into these logs?

I don't think so.

I'm pretty sure that the log files to restore exchange. If you do a backup of the IS the log files should be deleted though. So don't delete them unless you do a full backup of your IS.

Cheers

You need to back these files up using an exchange aware backup program. We use NT backup, works fine. The log files or the checkpoint file should never be deleted. A full backup of the IS will back up the exchange stores and flush the transactional logs for the stores.

1. If you whack uncommited logs your stores will dismount.

2. Do a full online backup with an exchange aware backup program to truncate your logs.
