Log Files building up

\exchsrvr\imcdata\in\archive and \exchsrvr\imcdata\out\archive fill up rapidly with log files. I constantly have to manually delete these so my disk space isn't taken up.

How can I stop or minimize these logs?
 
Are you backing the server using a program like Backup Exec at all ? Many of these programs have Exchange Connectors that can backup and then delete the log files afterwards.
 
This doesn't sound like standard logging to me. Sounds like you have "Message Archival" turned on under Diagnostic logging for Internet mail messages.

Site \ Configuration \ Connection
Double click Internet Mail Service
Look at the Diagnostic Logging tab.
