log file sizes

Hi, I'm somewhat a linux newbie, and I've recently setup a server runnning RH7.2, Apache 2, PHP 4, vsftp, XMail and MySQL. Everything runs beautifully and I would like to keep it that way.

What is the best strategy for limiting the size of the log files the OS and these apps generate? Some sort of cron process? Also, I don't want to simply delete the logs periodically, I just want to limit their size. Any ideas would would be appreciated!
