How do I find on exchange 2003 where it list the domains our email server is hosting?

In Exchange System Manager, expand Servers > your exchange server > Protocols > HTTP. Go to the properties of your Exchange virtual server and click Modify on the General tab. There you will see a list of SMTP domains.
