Linking to other servers

Can you place documents in a document library that reside on another server (e.g. my file server)...?

Depends on what your trying to accomplish. Because SharePoint creates copies of the files being uploaded and then stores this document in the SQL Server, you could store these documents anywhere that the SQL Server mdf is located (file server). If you want to maintain the documents outside of SQL you could always create a list section that point to a file server and contains the documents (hyperlink). You could also create a web part that allows browsing of a file server for documents but I don't have that knowledge level at this time (just started leaning about web part creation). I hope I didn't confuse or misunderstand.
