Is there a way in Access (TableDefs or the like) where by you can set a property of a table to stop it being linked to from another database?

Yep.

Right click on the tablename in the database window. Click properties. Check the "Hidden" check box.

To see it again, click the Tools menu, then click Options, then the View tab. Check the "Hidden Objects" checkbox in the "Show" section.

The properties of the table will still have "Hidden" checked, but the Tools Options setting overrides it. You'll need to uncheck "Hidden Objects" for it to be hidden again.
