Like MagicWand (PS) For Deleting Outside A Shape

I'm pretty new to Illustrator so I need a bit of advice on procedure.

For the clearest example I can think of, I'll go with a snowboard. If I were designing art for one on a template shape , how do I delete all of the stuff that I did that overlaps the edges of the snowboard?

In photoshop, I would just select the item, invert the selection and hit the delete key but this obviously won't work in vector art as it is a different media. What is the best approach to this?

The Pathfinder palette has several options that let you remove overlapping areas.
Illustrator's help file should be a good reference on what each button does.
 
And it does have some options but it seems to be not quite what I'm looking for. I think part of the problem is that the shape I'm working with is made up of 6 curved paths to begin with so that confuses the issue.

 
You can group all your artwork and then make the shape that you want it to end up as. Select both the group and the shape and make a clipping path (apple + 7 or Object>clipping mask>make) and it should do what you want.
