I just installed an LG 4040 DVD burner. My system chose PIO 4 and DMA 2 as its settings.

I discovered that the same settings were used for my additional two CD burners.

Should I change the IDE channel settings in Device Manager to use DMA mode instead of PIO mode for all my burners?

They currently all work fine, but want them to do be as "speedy" as possible.

I have a 2.53 GHz machine, Windows 2000 and 1 gig of RAM.

Yes - I would change the controllers to use DMA and then for the drives to use DMA if available.
Even if it doesn't speed up by an appreciable amount, it should reduce the load on your CPU.
