Could someone please tell me why this will not work:

{Command.Invoice Date} in Last7Days

This is a datetime field.

It's giving me the error "A String is required here"?

If {Command.Invoice Date} in Last7Days Then

{Command.Invoice Date}

Else

0

Gives me an error message:

'A String is required here' and highlights Last7Days

That means your datefield is a string and needs to be converted to a date. However, we don't know what the string looks like.
