Language problems

I design newspapers in InDesign CS3 and now CS5 and have seen the same problem in both versions.

The language is set to English Canadian (and in the original word documents, too) but for some reason InDesign sometimes switches to some random language for no apparent reason. We see this when we spellcheck the document, to find that a story is in Bulgarian or Swedish!

Has anyone encountered this problem before or know how to deal with it?
