Brian Madden put out a good book on Win 2003 earlier this year; Terminal Services for Microsoft Windows Server 2003: Advanced Technical Design Guide.

Been in this business since 1983, the book by this author are comprehensive, well written,least boring, with the least Ms proganda. This guy knows networking

I would recommend books from the publisher O'Reily. I haven't seen their Win2003 book, but I've purchased many of their other books and they are my favorite by far.
