I need to compile a minimal kernel with basic support (scsi, usb, video, etc.). Which options can I exclude during the make menuconfig?

Just exclude everything other than scsi, usb, video, etc for your minimal kernel.

In all seriousness, without mentioning why and for what you want to create a minimal kernel for AND what type of hardware you have on your target, we really can't say.

Compiling a kernel with scsi, usb, video, etc is NOT a minimal kernel IMHO.

well, if you consider the number of default modules in a standard RH kernel then that would be quite minimal...

Out of curiosity, I just went through a default FC6 kernel version 2.6.19-1.2895 config and counted the number of xxx=m and xxx=y lines. There are a total of 2074 configured modules compared to a custom build of mine with just 570 modules. I might be able to get it down a bit more if I threw away some of the USB networking/modem and wifi stuff.

I suppose a kernel build with just the target's needs in mind would be considered minimal.
