We are looking for a IRC server for linux that will support LDAP along with a variety of other things. Is there a preferred IRC server that is widely used? We have googled around with no luck.

If all you need LDAP for is authentication, you may have better luck searching for an IRC server with PAM support, then PAM can handle LDAP.

If you need more than that, it'd be pretty easy to hack LDAP support into ircd. I did it for mysql and it was a cinch.

So basically, there isnt much of anything big and great out there?

irc servers have always been kinda black magic. The best and best performing are freely available and cryptic to run, but there just hasn't been a market to develop a commercial version. I am only familiar with the efnet version and a quick search through google didn't turn anything up. I was just trying to suggest a more likely path in your search. :)
