Could someone please clarify if the ActiveSync "officially" supports bidirectional sync on ALL Outlook Contacts, Calendar, Email, Tasks etc?

Ie if exchange pushes the email to the iPhone, they reply, is the Sent Email sent back to Exchange? If a contact is created on the iphone is it created in exchange (as well as edits to existing contacts), calendar entries etc?

I can't seem to find documentation that states it's supposed to work or not.

Two way Email, calendar and contacts will work.
Tasks isn't supported.

If you have a search on msexchangeteam.com for active sync somewhere they have a list of the bits that different types of handsets such as windows, iPhone, symbian etc support.
Apple haven't implemented the full stack.
