please can someone give me a walk-through on setting up a simple firewall for a redhat 7.2 box acting as a squid proxy and a samba domain controller.

For Samba as PDC, you can check from

And for simple firewall, you can use lokkit.
For squid proxy, you can check from

Is this something you want to use as a firewall, and to give out DHCP, etc?

I suggest you try out IPCop (a Smoothwall fork) at

http://www.ipcop.org.

It's a full ISO with firewall, DHCP, DNS services, squid, etc. And it's free. Makes for a good firwall as it leaves out the unnecessary packages and services, and can work from a web interface accessible through either Windows or Linux.
