IP Office being used for DHCP server.

At several of my locations where our DHCP servers are infected. I'm going to use the IP office as the DHCP server. How can I make sure QOS and voice quality will not be and issue. Secondly. I've done this with one site. The phones that were connected before the infection will connect using the IP office as DHCP. Any new phone will not. What am I missing. Any help would be appreciate as I may have up to 50 sites o change.
 
What I normally do.

Add a voice vlan to the switches.

All ports on that switch are member of the (native) data vlan and the voice vlan. Where the data vlan is untagged and the voice vlan is tagged.

Then one port on the switch is only a member of the data vlan, untagged. This is connected to LAN 1 of the IPO.
Then one port on the switch is only a member of the voice vlan, untagged. This is connected to LAN 2 (wan) of the IPO.

Now, when you connect an IP phone, the switch would recognize that this is a voice device and put the phone in the voice vlan, where the IPO is the DHCP server.

If all is setup correctly, the switch should take care of the QOS.

 
If there is already a VLAN configured,
It is because your defective DHCP probably has the 176 and 242 options configured ;)

1st boot in the data network, get the 176/242 options, setting the VLAN ID
the desk phone reboots
2nd in the voice VLAN...

Without the first DHCP, you don't have the 1st phase.
You'll have to configure the vlan manually on every phone ( press * when phone starts )
If there is a default vlan dhcp, just set the options ;)
