I sure hope you are deploying a TEST run before doing this live. You have SO many questions that would be answered by actually deploying and configuring a real SBS. But you should do that in an environment which won't impact on a live network.
It's said that installing and configuring SBS takes a minimum of THREE time before you get it right. So, give it a go a few times on your own beforehand.
