I have an Intel 850GB motherboard at home and I was wanting to put more memory in it. I'm not very technical when it comes to hardware, but I did look at the doco for the board and am I reading it correctly that you must pair up memory cards? So for example, I have a 128 MB memory card that I want to put in but I can because I need to have two of the same, is that correct?

That's correct.
That MB uses RDRAM memory, which must be installed in pairs.
 
That's good and bad. Good that I read the doco correctly and bad that I need to dig up an 128 MB memory card because one is obviously useless to me. Thanks ski for confirming my interpretation.
