How do I install VFP9 on my computers (XP and Vista) alongside of VFP7 so that I can test 9's features without interrupting my work in 7?

Just choose a different install directory. I have VFP 7 and VFP 9 both installed and there are no problems running them both.
After installing VFP 9 though, your file associations in explorer will change. So if you double-click on a VFP file like .PJX, .SCX, .PRG or whatever, it will now open in VFP 9 instead of VFP 7. You will need to open VFP 7 first, then go to the project folder and modify the project to open it in VFP 7.

Yep, as Dave said, simply do it.

And Dave also is right about the file extension associations. But on the one side you could revert that via VFP7.EXE /REGSERVER, on the other side you can start VFP7 and open files from there as usual. And you'll never look back anyway. It's compatible.
