I'm working on the layout for an A5 (210x148mm portrait) booklet that needs a page that the reader can fold out (297x210 landscape). In order to create the artwork I need to create a new master page, but how to I define a new page size to this new master?

You can't unfortunately.

But your layout is 210x148 right? And you want 297 x 210. Well just add extra pages to the side of the page to make the right width. It's basically just doubling the size of the 148!

What you can do is create a document at 297x210. Then you can do all your designy art work on it. Then save it as a CS3 or if you have CS2 then a PDF.

You can insert CS3 documents inside one another. So you use the 297x210 document as the design part to lay it all out. And then place the designed file right inside CS3. If you have CS2 you can make a PDF and then put that in the CS2 file.

I only suggest the above if you are going to working on a rotated page, i.e., if the page is 210x297 when you add the pages to your document.

Here's a thread on how to do the horizontal spreads within InDesign to increase the size of your page, posted by me :D
