I have an Excel workbook that has 36 charts that I would like to insert in Word. Is it possible to do this, but only have the underlying data saved once into Word, rather than recreate the spreadsheet for each of the 36 instance.
I don't understand the question. You want one Excel spreadsheet's data. You want to create 36 charts to link into Word, but you don't want to save the 36 charts in the Excel file? Not possible. Create each chart, paste as a picture into Word and don't save them; no problem. No, you can't change the data and have it change the charts in Word. Is that what you're asking?

Actually, what you're suggesting works better in PowerPoint. Meaning that you can insert a spreadsheet into a PowerPoint presentation while still maintaining a link to it. Meaning that it looks for the spreadsheet when you open it and updates the information automatically.
If you want to try this out, open a blank PowerPoint presentation. Select Insert>Object. In the Insert Object dialog box, select Create From File and check the Link checkbox. Then click the Browse button to find your spreadsheet.
