I wonder if anyone can point me in the direction of where I can find information on dealing with Multicast when there is no need to route and/or no facility to route it within the network.

Is this covered in any of the Cisco training areas as everything I've found on it thus far refers to Layer 3 only with PIM and IGMP snooping.

I've faffed and googled around and managed to locate a command that seems to make it work (ip igmp snooping querier). So now everything isn't being sent out every port but really I'm flying a bit blind and could really some background information and config.

I know there are several chapters on multicast in Routing TCP/IP Volume 2 by Jeff Doyle. Don't know if it will address your issue specifically. There used to be a specific course just for multicast as well, but never saw the material for it.

Do you have your vlans set up to where the distribution switches are pruning so that it lessens the chance of all your vlans from seeing multicast traffic?

Design in this case helps a lot, but you may not be able to just redesign your nw...
