When I reopen a large (book) file the text has shifted, resulting in Chapter headings flowing back into the previous chapter. Since the book is 700+ pages, trying to reset the text every time I work in the book is a time issue. How to get the book finished and know all pages are intact? (my printer is adamant that I not separate the book into chapters)

Why doesn't your printer want you to separate your book? Maybe you could supply him/her with pdfs instead, which would get around the problem. They sound a little bit unhelpful...
Not sure about your chapter headings moving – how have you set it all up? Are they linked text boxes? Have you pressed the enter key (as opposed to the return key_ to move the text into the next text box?
