I've got a cross-tab containing retail pricing by retailer (columns) and commodity (rows). I've hidden the Total column that contains the totals for each row and would like to replace it w/ an Average column to contain the average for each row's values.

Right click the total and select Edit Sumamry and change it to a Average.

Assuming you want a sum on the inner cells, you would need to add a second crosstab that used the average type of summary. Use the same row field, but no column field, and then suppress the label and eliminate unwanted grid lines in the customize style tab->format grid lines->select unwanted lines->uncheck "draw line". Then overlay the second crosstab on the first (after suppressing the total column in the first).
