Are there security risks to having both Sendmail (MTA) on the same box as an IMAP server?

the security of any PC is as tight as it's weakest daemon.

if you're using a new version of sendmail and a new version of a secure IMAP daemon then no, there is no security risk from these applications ...

I only allow IMAP from localhost via WebMail or a tunnel
