In Photoshop 7.0 IMAGE->ADJUSTMENTS->VARIATIONS, the changes I use stay there even when I start work on a new file, where I then can't get PhotoShop 7.0 Variations to start over at the initial point with no changes yet having been made. Since the thumbnails are too small to discriminate on previously applied small adjustments, I often don't know where I am in terms of applying a new adjustment from the beginning. Does anyone have any input on this?
 
I've always considered 'variations' as a gimmick. For best control, use Image Adjust Hue/Saturation. This does the same thing.

Looking at color variations can be misleading - - sort of like the old optical illusion where two circles of the same size are each placed in a small box and a large box - and you think one circle is larger than the other.
 
As far as I can tell, Image Adjust Hue/Saturation does NOT do the same thing. Hue "rotates" the color into other colors, and Saturation does something different than what Variations does. I can't find any other command in Photoshop (including "Levels") which does exactly what Variations does - especially increasing a particular color, and increasing highlights or shadows.
 
You are correct with your assumption about Hue/Sat if you do not change the value from 'Master' in the 'Edit' drop down menu.
