Illustrator 8.0 stroke weight for fonts

How do you type a word, thicken it via Stroke, and then KEEP it thickened after applying a white fill? Problem is the letters at this point, following the fill, always REVERT to their pre-Stroked thickness (even while the still-adjustable fill is retained).

So -- what is the use of having Stroke function at all if it evaporates like this?

Using Mac OS 9.1.

Sorry for the Illustrator 8 restriction, but that's what I have to work with. Therefore I don't have access to Appearance Palette. (Too bad!) Thanks.
 
Are you sure you have the Fill box on the Tools palette forward when you're applying the White fill?

The thickness of the letter should be the normal width of the font plus the stroke. I should not shrink when you apply any fill. However, if you apply a very thrick stroke and the letter is rather fine and not a bold or black, that fill might alomat disappear because of its size relative to the thick stroke. I just applied a 5 pt red stroke to a 60 point Myriad roman. The fill, regardless of color, can hardly be seen.
